Winemaking:
The grapes are harvested by hand in small capacity boxes and transported to the cellar in a short period of time. After pressing and pre-fermentation at controlled temperature, the must was decanted for 48 hours at low temperature. The aim of winemaking is to obtain an Alvarinho Soalheiro that concentrates the quality of the grapes and allows for a good evolution in the bottle.
