Winemaking:
Grapes harvested manually into small boxes and transported to the cellar where they were destemmed and gently crushed. Cold maceration for 72 hours and start of spontaneous fermentation with temperature control. Daily “Delestage” and pumping with aeration for better color fixation and aroma integration. Malolactic fermentation takes place during the 2 year aging in French and American oak barrels.
