Winemaking:
The grapes, exclusively from the Encruzado variety, were harvested by hand, in small 18 kg boxes, according to a careful selection of the best grapes from the vineyard. The grapes were fully destemmed and immediately pressed. The resulting juice went into a small stainless steel tank, where it was decanted for 48 hours at low temperature. The clean juice fermented with selected indigenous yeasts in 500L French oak barrels. During fermentation in barrels, the fine lees were stirred (bâtonnage) and after fermentation the wine remained in barrels for 4 months.
