Winemaking:
Hand-picked grapes for small perforated boxes. Reception with total destemming. Gentle crushing and pressing under an inert atmosphere. Fermentation at a controlled temperature of around 16ºC. Aged in stainless steel vats with "bâtonnage" until the bottle is filled.
