Winemaking:
Manual harvest in 20 kg boxes. Partial destemming. Grapes are crushed with feet in open tanks for two days in cold immersion. Finish fermentation in stainless steel tanks with temperature control. Pressed in a vertical hydraulic press. Aging for 18 to 24 months in new 300L French oak barrels.
