Winemaking:
Manual harvesting and cutting of the grapes in 12 kg boxes, pressed and crushed in a short period of time, followed by a 48-hour decanting process. Alcoholic fermentation takes place for 1 month at 12ºC in stainless steel vats. Staging 5 months 'sur lies'. After bottling, it spends 3 months in the bottle.
