Winemaking:
The grapes are 100% destemmed and then crushed by foot in a granite mill called “lagar”. The wine is fermented for 6 days at a controlled temperature of 26ºC. Malolactic fermentation takes place in stainless steel vats and then the wine ages in new French oak barrels for 12 months.
