Winemaking:
Vinification in a foot-treading press, alcoholic fermentation occurs through the tanning of the solid parts, so that the macerations are smooth, allowing a slow and prolonged extraction of the phenolic components of the grape. This whole process is carried out at a controlled temperature of 22ºC, throughout the entire winemaking process. After extracting the full potential of structure, color and aromas, a gentle pressing follows. After this process, the wine remains in a vat where malolactic fermentation takes place. Aged for 8 months in stainless steel vats and 8 months in bottle.
