Winemaking:
Grapes are harvested by hand over a period of time where the ideal balance between ripeness and freshness is captured. The fruit is carefully transported to the cellar in 12Kg boxes where the bunches are manually separated and fed by gravity into stainless steel tanks where maceration and fermentation are carried out for an extended period at controlled temperatures.

Perfectly accompanies hot dishes, whether they are traditional cuisine (game and roast meat) or stews (seasoned, white or red). It challenges new pairings, including with fish, with the choice of garnish being a prominent element for pairing: rich dishes with land/sea confrontation. Another little trick is to use some red wine preparation in the dish.Allergens:
