Winemaking:
Manual harvesting, selection of the bunch on a sorting table, destemming, crushing, primary fermentation with natural yeasts and temperature control (25º-28ºC) in granite presses with foot treading, followed by pressing in a basket. Aging in used French oak barrels for 12 months.

Intense color with violet tones. Very high and complex aroma, showing ripe red fruits, characteristic balsamic notes of old vines and hints of spices from the barrel. Great balance and elegance, with well-integrated tannins and balanced acidity. Long and persistent finish, with potential for great longevity in the bottle.Store and serve advice:
Best served between 17ºC-18ºC.Food Pairing:
Perfectly accompanies hot dishes, whether they are traditional cuisine (game and roast meat) or stews (seasoned, white or red). It challenges new pairings, including with fish, with the choice of garnish being a prominent element for pairing: rich dishes with land/sea confrontation. Another little trick is to use some red wine preparation in the dish.Allergens:
