Winemaking:
To compose this special Reserva wine, which is one of the oldest brands in the Alentejo region, we carefully pre-selected the grapes from the oldest vineyard to rigorously monitor their maturation evolution. Only the best were picked, exclusively by hand. In the winemaking centre, they were crushed, fermented and left in prolonged contact with the skins for 10-12 days to extract all the complexity and aroma of the fruit. Malolactic fermentation took place partly in stainless steel vats and the rest in wooden barrels. The selected final batch aged for 12 months in new French and American oak barrels to gain more structure and complexity and then 6 months in bottles in our cellar.
