Winemaking:
The grapes are harvested manually, in 18 kg boxes at their ideal maturation point, and subject to a rigorous selection at the entrance to the cellar, with the aim of presenting a vigorous maturation, leading to greater aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in robotic vats, with the intention that the quality constituents present in the skins of the very ripe grapes, pass smoothly into the wine. After the malolactic fermentation the wine was always in stainless steel, so that in the end we have a fresh and fruity wine.
