Winemaking:
The bunches are destemmed and pass through a sorting table for an optimal selection of the berries. The grapes are then crushed before heading to the traditional marble vats known as lagares, where they are trodden by foot. Alcoholic fermentation ends in stainless steel vats, followed by 12 days of post-fermentation maceration. Aged for 12 months in new half French oak barrels.
