Winemaking:
Production follows sustainable agriculture protocols, with controlled yields for high quality through hard pruning, removal of secondary shoots and bunch thinning. At the optimum point of maturation, the grapes are harvested manually in small boxes that allow the quality control operations of bunch selection in the vineyard and on the sorting table. After sorting and crushing, the grapes are transported by gravity to small vats and fermented only by indigenous yeasts at 27ºC. The post-fermentation maceration lasts 21 days. The wine matures for 18 months in French oak barrels.
