Winemaking:
Some of the best Moscatel grapes from the Favaios vineyards are selected and harvested by hand. To extract the maximum aromatic richness from the grapes, a 48-hour pre-fermentation maceration is carried out. Alcoholic fermentation takes place in stainless steel vats for about 15 days at a controlled temperature of 15-18ºC. Once the alcoholic fermentation is over, a 5-month phase begins, during which contact with the fine lees is promoted, followed by filtration and bottling.
