Winemaking:
Made exclusively with grapes grown organically in the Symington family's Assares, Ataíde and Canada vineyards in the remote Vilariça Valley, (located in the extreme northeast of the Douro Demarcated Region, close to the Spanish border). Hot, dry summers alternate with very cold winters. The age of the vines varies between 25 and 30 years and the vines obtained full organic certification in 2006 (Assares) - although cultivated in organic mode since 2002 - and 2010 (Ataíde and Canada). The grapes were hand selected with great care. Fermented in stainless steel vats with total temperature control (between 25 and 26ºC) with prolonged maceration by pumping over. Stage Ten months in French oak barrels.

Ready to drink now, although it will benefit from some aging in the bottle. Given its complete structure and fine acidity, it will evolve very favorably in the bottle for another 2 to 3 years.Food Pairing:
